Hooray for Memorial Day Weekend.  Not sure what all our plans are, but I think I want to try to get my plants (herbs) for my container garden. 

Saturday – Brian out
- Not sure what since we may be at Brian’s Mom’s.

Sunday - (greeters) Scrambled eggs with ham, spinach, Swiss cheese/Hashbrowns
-Grilled sausages/Beans/Potato Salad
- Ellie’s Cobb Salad

Monday – Brian at Men’s Breakfast
- Grilled Cumin Chicken /Risotto with peas
- Grilled Thai Beef Salad

Tuesday – Salmon Cakes with Ginger Sesame Sauce /Grilled Asparagus

Wednesday –   Steak Tacos with Cucumber-Avocado Sauce

Thursday –  Garlic-Basil Shrimp over Orzo /Salad

Friday –  ?


Brian started looking for breakfast ideas before work.  And looking for the more healthy meals again.

Easy Breakfast Ideas
Swiss Oats with fruit and almonds
Smoothies  (Have a couple Ellie ones I will be trying)
Muffins (Ellie) or Breakfast cookies? (zonya)
Cold cereal
Omelet with fresh or frozen veggies (shredded carrots, spinach, peppers, onions, even black beans).

Wednesday – Grilled Pork Chops with Basil-Garlic Rub/ Polenta/ Veggie

Thursday – Meatballs with quick and spicy sauce and whole wheat spaghetti/Salad/Naan bread

Friday –Breakfast - Greek yogurt with fresh berries and sliced almonds

Lunch - Fast and Easy Tuna Salad Sandwich/Salad

Afternoon Snack - Homemade hummus with raw vegetables

Dinner - Beef, snap pea, asparagus and mushroom stir-fry over Brown Rice
(Well, won't be doing the baby corn, but the rest probably.)

Easiest Cinnamon Rolls.

Oh my, but these are yummy. And super easy.
When I made the cinnamon roll, I used a cinnamon sugar blend that I had already made and sprinkled on some brown sugar.  I also made half the recipe with a Trader Joe's product called Cookie Butter (think gingersnaps flavor with the consistancy of peanut butter.)  and just used the cookie butter and skipped the butter.
Also rolled the biscuits more into rectangles which made it easier.

Cinnamon Roll Muffins
Yield: 8 muffins Servings
An easy and delicious breakfast!
Course: Breakfast   Skill Level: Easy

Ingredients
1 can Grand Biscuits
1/4 cup butter softened
1/2 cup brown sugar
1 1/2 tsp. cinnamon
. FROSTING . .
4 oz cream cheese softened
1 tsp. vanilla
1 1/2 cups powdered sugar

Instructions
Preheat oven to 350 degrees F
Roll each of the 8 Pillsbury Grand Biscuits out into a flat circle with rolling pin. Coat with granulated sugar on both sides to sweeten up the dough.
Smear about half a tablespoon of butter onto each flattened biscuit.
In a medium bowl, combine brown sugar and cinnamon. Sprinkle a good amount of the mixture onto each biscuit.
Roll up each biscuit and cut each roll into thirds.
Place three pieces, cut side up, into each muffin tin cup.

Bake at 350 degrees F for about 15-18 minutes. Once cooked, let cool in the muffin tin for 5 minutes, then remove and let finish cooling

For Icing, beat softened cream cheese, vanilla, and powdered sugar together until smooth. Top Each Cinnamon Roll Muffin with Icing.

Short week for me since I will be going solo down for Mom's birthday.  Unfortunately, this means that Brian has to suffer with being the only human with the three critters.

Tuesday - Etouffee (Carma to make Monday night) serve over cooked rice

Refinancing Issues still.

I adore our insurance guy.

Our mortgage company "forgot" to send the insurance company the payment for our house insurance. Insurance company sent a note saying that they would cancel us in 10 days.
Friday, I had to make a Frantic call to Mortgage company. Ooops, after review it is their bad. When we refianced, they forgot that insurance needed to be paid. CSR agent said that a payment would be Fed Ex for Monday delievery to the insurance company's main office. 
Called our insurance guy and explained the situation and that Mortgage company would send payment overnight to Insurance.  Insurance guy got into the system and fixed it so we aren't cancelled.  And assured me that I could call him later in the week to make sure the payment went through. 

Called Insurance Guy Thursday morning and found out that not only is our payment NOT in the system.  Insurance Guy said he would call the Mortgage company.  Mortgage company had sent the payment, but had NOT FedEx the payment as promised.  Just sent normal mail.  < insert very grumbly noises >  So glad he called, because it would not have been pleasant if I had found that out.   Insurance guy assured me that I could contact him and make sure that the payment is in.  And that he would contact them if we haven't seen it by Monday, he will get it fixed up.  Plus we won't lose our coverage.

Crazy with stuff going on this week.

Sunday - Oatmeal with dried cranberries.  Side of pineapple
          - Taco Pizza from Papa Murphy's
          - Mac & Cheese with smoked sausage.

Monday -Slow-Cooked Spiced-Cranberry Pork Roast served with mashed potatoes and green beans

Tuesday - On our own.  Brian has a meeting at 5:30.  He'll probably stop somewhere on the way from work to his meeting.  I may swing by A Dong for something to go.

Wednesday - Crockpot rotisserie chicken over red potatoes and carrots
       (This may be one of my favorite crockpot recipes.  I probably am going to start fiddling around with the spices though.  Yeah, BIG shock with thought of me tweaking or utterly changing a recipe.   - I blame credit my mom)

Thursday -  Greek Style Beef Ravioli

Friday -  Country Pork Skillet

Will work on my menu this weekend.  So busy with some work stuff (including the quiz for the staff retreat......hooray!) and getting ready for the women's retreat for church.  So will be punting until Sunday I think. 

*The quiz is one of those personality assestment.  but it only gave 20 seconds to read and decide on each set of questions.  So you would have this set up.  Strongly me |Sort of Me| Neutral | Sort of Me| Strongly Me. 
On one side would be one comment and on the other side would be another comment.  Which isn't bad when it was say "I like fluffy puppies and rainbows" vs "Toxic slug is great!" 

But the problem was when it was things that were not easily compared (or even different subjects.)  So I neutraled quite a bit.

Swimsuit struggles

Annoying evening of trying to order online. Been on Lands End's site  looking for a swimsuit (which is bad enough) and EVERY single one that I tried to order -that wasn't over $60- was out of my size. However, was able to find Bri a decent pair of trunks for less than $10.

And I really need to find something before vacation.  The B&B that we are going to just has a patio hot tub, not private ones in the suite.  SIGH. 

Yeah, I could have ordered one of the more expensive suits, but I really don't want to spend $80-110 on a suit that I am going only wear probably a couple times. 
*this may a good place to point out that while my wedding dress was over $100, I wore it to work several years.  Then again it wasn't a Big Fluffy White Dress.

Need to see where else I can find suits.

More of the dull with some intermittent excitement/pain - Part 2

Sorry, got caught up with some other stuff and didn't get this posted.

By lunch I was oddly getting a little bored of reading. Plus the book that I really wanted to read was on my Nook. And while mostly charged, I really didn’t want to run the battery completely down. Plus it is always the case of when you can’t go somewhere that is when you get cabin fever.
Since the realization that we didn’t have a good small radio (though Mom mentioned giving Brian something a couple Christmases ago so I want to try and find it), Brian really wanted to get a transistor radio. He talked me into going down to the hardware store down the street. The store is about 7-8 blocks away, so sure. I mean it isn’t like we were doing anything but waiting. We trekked up to the cleared street rather than to try to go under the tree still hanging on the wire at the end of our street.

Here is a map. The purple line is our street with the dot representing our house. The yellow street is the main drag. About where the map ends is still about 3 blocks to the hardware store.

Here is the rub. When we got to the hardware store, they didn’t have simple transistor radios. A weather radio or 3-4 clock radios, but nothing that Brian was looking for. So we then walked down to the grocery store but didn’t see anything, then walked down to the Walgreens. Which thankfully did have a little radio that took 2-AA batteries. When we finally got home, I told Brian that was a bit more of a trek than I had planned. And while I do want to start getting conditioned so we can hike during our summer trip to Colorado, this was not how I planned on starting it. (When I looked online the next day at work, the round trip was 6 miles. While not a lot for several of my friends, it took its toll on me since I really had not been walking much the past year.)

By the time we were on the return trip to the house, I had a call from my girl Amy asking where I was for working at the church. (I didn’t have her number to let her know that we were basically trapped so I tried to leave a message with a mutual friend, but that didn’t work.) Thankfully several people know that I don’t flake off normally and she called to see what was up. Weirdly my phone disconnected before I finished my call.

When we got back our street around 4 or so, the tree trimmers were gone and the tree – while not gone – was at least cut up and moved to the side of the road. Still without electricity. Getting ready for church was not going to happen. We ended up going over Brian’s mom’s house to spend some time basking in electric light. Basically went home and was early to bed.

Which was a good thing since the power company came at 5AM to fix the electricity. How do I know? Beepbeepbeep…Sadie’s barking… Man with bullhorn or loud two-way radio talking (Since he was restoring power, said walkie-talkie did not get put somewhere uncomfortable.)
By 7AM we had power and were able to get to work. I still had to contact the power to fix the lightpole on our property. The one of the stability cables snapped off. And the whole street of power lines are very loose and sagging. Ah well, we have power. (And the cable was fixed by Wednesday.)

And that was my exciting and dull weekend.  Some lessons learned.

Have a small radio with new batteries nearby. 
Have flashlights (that wasn't a problem)
Get more batteries than you think you will need.  (We need to get some D and C cell batteries)
Have phone numbers of several contacts in your cell phone.  Even if normally you would just look them up online.
That contact list? - Also write it down and have in a safe spot like near the door.
Always charge cell phones (and ereaders)  - though we did pretty good.
